Does anyone know of a checklist for removing the First server from the site? I have seen the microsoft technet article but I want to check other references. I really do not want mess this removal up....

Read Q152959 from MS and follow everything it tells you. Give enough time for replication to take place and disable exchange on the fist server for a minimun of two days, while performing the following observation:
-replication still works great,
-users can still access the offline address book and all public folders
-and there is nothing unusual.
once you are confident that everything looks ok, delete the first server from the Server container.
