uninstall exchange 2000

I want to uninstall Exchange 2000 from a test domain, beef up the server and re-install Exchange. I get stopped with a message "...One or more users currently use a mailbox store on this server. They must be removed etc." I have physically disabled every users mailbox but the administrators SMTP mail address cannot be removed. How do I remove the Administrator's e-mail address and is there a way for me to identify all users who use the Mailbox Store?

In AD users and computers, choose view Advanced Features and you can then go to Exchange system objects. There you will see a most likely disable System mailbox, which you can then right click on, goto exchange tasks and then delete the mailbox. I'm not sure where to view everyone that has a mailbox.
