We initially installed Exchange Server 5.0 on our only file server. Due to performance reasons we now wish to move it to its own server. Has anyone done this or have any suggestions as to where to find info on this process. Thanks

One way is to perform a "Disaster Recovery". You can find information about this operation in the Technet article "Microsoft Exchange Disaster Recovery". We have used this method a couple of times when moving a Exchange server to new hardware.
There´s other ways but none that we have tried.

you can set up exchange as a new server in the same site on the new machine and then move the milboxes to the new server. wait for about a day for the directory to sync and then remove the exchange from the original server
you must configure the mail clients for the new exchnage server computer name
